Lots of potatoes!
- chicken breasts about 2 lbs for 4-5 people, cut in strips
- 1 c flour
- 1 T seasoning salt ( I use Johnny’s)
- 1/2 t salt
- 2 t paprika or a bit of Creole seasoning
- Dash of pepper
Soak chicken in milk, best to submerge in a bowl. Heat oil on 300 to 350 in skillet while cutting potatoes. Coat the potatoes in the pan. Probably only can do half of the potatoes at a time. Prepare a pan lined with paper towels to absorb extra oil.
Keep turning till crispy or desired tenderness.Strain with a spatula and season them on the tray making sure to toss. For seasoning I like to use some Creole and Johnny’s seasoning.Yum! Make sure to add more oil if needed between batches.
Mix powder ingredients in a large bowl. Shake extra milk off the chicken pieces and place in the bowl of mixture. Turn and coat pieces and place in skillet.
